What exactly does a due date mean then?

My husband's student loan was defered until right before we purchased our home. Since that time we have paid over the regular payment amount. The due date on our booklet says the 25th. After paying this loan for over seven years it doesn't seem to be going down at all. My husband called Sallie Mae this week and was told that he had interest added from late payments. He was told that the payments were over 30 days every month. He was told that if I mail in a payment on month on the 5th and the next month on the 15th, even though both dates are before the 25th they are still considered late. I don't understand how this is legal. If the 25th is the due date then anything after that date should be late, not 30 days from when they received the last payment..
