Wal-Mart is the only store I've seen that carrys Velveeta Cheese on a shelf with no refrigeration. I've made pimento cheese for years using the 1 lb. Velveeta cheese, but when I've bought it, it has always been with other cheeses on a refrigerated shelf. I bought a 1 lb. Box of Velveeta Cheese at Wal-Mart last week. It was on a store shelf without benefit of refrigeration. I wondered about this, but bought it anyway. I made the pimento cheese as usual, but the result was the cheese had a grainy consistency. It was so bad, I had to throw it away.in my pimento cheese I add a jar of pimentos, a small amount of mayonnaise, and chopped sweet pickles. The only thing that was different was the velveeta cheese had been un-refrigerated.
I know it says refrigerate after opening, but I learned an expensive lesson—it should always be refrigerated for best results. I don't want anything other than to let you know that this can happen and you may want to re-think how it's displayed in stores.
