I brought an adult bull elk into them for processing. Two months later. They called to tell me that I could pick up my meat. When I got there. I found out that they only had 120 pounds of meat. I asked where the other half of my elk was. I also stated that that much meat would be a good sized mule deer. Not a full grown elk. I was told that loss of blood and shrinkage caused the loss. The animal was already bled out before I brought it in to them. I contacted another butcher in town and I was told by him that they indeed did not get me all my meat. They still owed me another 30 lbs of burger, 2 rump roasts, 6 round steaks, 2 chuck steaks. That is what he usually gets from an elk.
