Owner does not pay employees what he says he will and changes pay periods to fit his convience

I started working for this man on July 18, we had an understanding that I would be paid salary that was based at 7.25 an hour for 40 hours which comes to a total of $290.00 a week. Then I am told that it is pay under the table until he gets his computer system put in. Which means no taxes taken out no unemployment taxes paid no nothing like that. I say ok for now that will do. (I really needed the job) so I end up getting sick with a stomach virus and running a fever was told by a doctor not to go to work I was contagious ok not a problem my husband calls Mr. Franze at the only number I have for him at the time which is his wife's cell number. She tells my husband not a problem she hopes I get better soon. I am off work for 2 days for being sick I am scheduled off for the next 2 days not suppose to return to work til Tuesday. I call Monday night to make sure I am still working in the morning and Mr. Franze is mad and says he don't know what is going on and all this other stuff and in short makes it sound as if I am fired. I say fine I will be in in the morning to pick up my personal belongings and the last of my pay. That is when he informs me he don't owe me anything. Now if you look at the work I worked which will be at the end of this you can see I worked 2 pay weeks for him.in short I was paid a grand total of 250.00 for 62.5 hours worth of work. He had given me an advance of 200.00 so I was able to pay my electric bill and then he claims all he owed me after that was 50.00. It was suppose to be 290.00 times 2 comes to 580.00 minus the 200.00 advance comes to 380.00 when it came time to talk to him and get everything taken care of I was put in a position where I had to accept 50.00 and he made me sign a hand written note that he paid me all monies owed me. (I say I was put in this position because if I did not accept this he was not going to pay me anything at all and I have kids at home that were wanting dinner that night and I had no choice but to accept this.) As far as I am concerned he still owes me money weather he pays me the salary wages we had agreed to or min. Wage the amount still owed for the salary wage is 330.00 now (subtract the 50.00 he gave me tonight) or if you go my the min. Wage of 7.25 he still owes me 200.00.62.5 hours times the 7.25 comes to 453.13 minus the 250.00 total he paid me already comes to 203.00 that he still owes me. I am not the only one he is doing this to there is a few other ex employees that he still owes money to that these other ex employees say they are also having trouble getting him to pay them. Unfortunately these are also underage employees under 18 yrs of age. And they have no clue what to do about it. Other then let it go. This is ridiculous and very unfair for those of us that work hard for this man and he treats us like this.in short he just does not want to pay the people he owes money to. As I stated before I am posting the hours I have worked for him and you can do the math yourself to see what I am talking about.
Thurs. 7/18 6am-2:30pm 8.5 hours Fri. 7/19 6am-3:30pm 9.5 hrs. Off sat. 7/20 Sun. 7/21 9am-5pm 8hrs., Mon. 7/22 9am-6pm 9 hrs., tues. 7/23 9am-11:30pm 14.5 hrs, wed. 9am-10pm 13 hrs. Off thurs. 7/23 (this day was swapped with another worker because of new hours and schedule changes this is also the night I got sick and called in) I called in for Friday and Saturday was scheduled off for sunday and Monday was not told of any changes or anything and I had talked to mr. Franze twice and his wife and I not only talked but were texting I was letting her know what was going on with the doctor appointment.
