Tip Ripoff When Using Gift Cards

My family, consisting of 8 people, visited Longhorn Restaurant for dinner and received the usual outstanding service with one minor exception one steak was over cooked. The store manager removed the entre cost from the bill and offered a replacement. Everything was near perfect until the bill arrived. To pay the approximate $190 bill, I used a $75 gift card and a credit card. The bill was reduced by $22 for the overcooked (and uneaten) entre (new bill amount was now $168). Because of its size, Longhorn automatically included an 18% gratuity of $30, raising the bill total up to $198. When the waitress returned for my signature, I noticed that Longhorn had subtracted the $75 gift card from the bill AFTER the automatic 18% gratuity, and then added yet another 18% gratuity ($19 more) to the new balance of $123 raising the bill yet again, now to $142.

I asked the waitress to explain the apparent double tip and asked if it was because the $75 gift card had actually removed the previous tip? The response I received was cryptic at best and did not answer my question, but with a family of 8 getting up and heading to the door, I did not have the time to calculate the entire bill again to figure out what happened. I signed, and because I believed the bill calculation had eliminated the first $30 tip, I added an extra $10 tip to bring the tip to what I thought was $29 (19 10) to match the remover $30 tip. There was a NEW line on the bill for additional tip, which further led me to believe that the original $30 tip had been deducted. After getting home, I redid the calculations of the bill and discovered that Longhorns calculations had INCLUDED the original $30 tip and added the $19 tip (now $49 yikes!) to it. My misguided $10 extra tip raised her tip to $59 on a $168 bill. This is clearly a rip-off and should be challenged at any and all Longhorn restaurants that try to get away with it. Look at your bill closely and do the math.
