Nissan Dealership rip off. (Mossy Nissan)

My wife's Nissan Sentra, (96 with 40,000 miles) a good car so far but experiencing high temp readings was taken to the dealership (Mossy Nissan San Diego. My wife took in the car and a few hours later was told a temp sensor was at fault but that she had numerous other things that needed to be done. A transmission fluid change, drive belts, decarbon the throttle body etc to the tune of 700 dollars. Since I had just recently changed the transmission fluid myself 8 thousand miles earlier I was very suspicious. Also my wife just returned from a trip to LA where she got 35 miles per gallon and the car aside from showing itself too hot ran like a champ.

I really feel that my wife was being ripped off due to her lack of knowlege about cars. After going to see the service manager and asking some pointed questions about really what if anything was wrong he backed down. I can only wonder how many other customers female or male they trick into fixing a lot of stuff that really doesn't need immediate repair now or in the near future.
