Desserts For Health Horrible wedding cake experience, refused to refund even part of the cost

Brocka Nolen, owner/operator of Desserts for Health in Dallas, Texas, provided my wedding cakes. A little more than half of the large cake was dry and had a bad taste. Ms. Nolen also used fabric ribbon and plastic red dots when my understanding had been that all the decorations would be edible. Finally, she used straight pins, the kind intended for sewing, to secure the ribbon to the cake, a safety hazard that could have been harmful to my guests. I actually bit down on one of these pins myself, causing alarm and some discomfort, but thankfully no injury.

I emailed with Ms. Nolen for the better part of three months, asking for a partial (50%) refund. While Ms. Nolen made statements in her emails that seemed to imply she agreed I was due a refund, such as "Due to other monetary circumstances and emergencies unrelated to you, it is not feasible to refund anything at the moment. Sorry, but if its not there, it cant be sent, " she would at the same time refuse to send the refund.

Ms. Nolen even went so far as to state, "You knew in the beginning I was an independent operator, not a large establishment. If you were reluctant you should have gone to a store front bakery, " which seemed to say I should have known she would not do a good job in the first place so this was somehow my fault.

I still plan to pursue this matter in whatever way I can, including reporting her to any and all agencies that either she is affiliated with in some way, or that oversee this type of business. This includes the local health department.

I would encourage your readers to avoid Brocka Nolen, Desserts for Health. She is an unethical person.
