Why bother to have a contract?

Our organization employs Aramark for Dust Mops and Pads. We've utilized them to get a very long time since they're Marriage Companies though I've been with my organization to get a small over annually. I had been shocked in the costs they charged and also the deal was up last April and not just was the cost discussed (a savings around $1050/year), however the period of the deal as Aramark desired a-60 month contract. (Discussed a 24-month agreement)
