Meat Glue Transglutaminase Bad taste

I had a bad experience with the product of Direct USA Foods. They sell cuts of beef and seafood for discounted prices. I purchased a box of meat from them and cooked one up. The meat left a horrible aftertaste in my mouth for about an hour. It tasted like some chemical. I promptly called the delivery driver back and told him what had occurred. He told me he was not in the same city as me anymore and he would need to speak to his supervisor about replacing the meat. I told him to understand that I was not interested in receiving a replacement, I was interested in receiving a full refund and returning the meat. After some back and forth, which was just annoying nothing insulting, he returned to my home. I packed up the meat and he took it from me. I asked him where the money was, and after he checked the meat he gave me back the money. So, everything was going as planned.
Well, I was wondering why I tasted such a horrible chemical aftertaste and did some research. First off, my friend was unable to detect any chemical taste. I came across a meat-binding enzyme called Transglutaminase or "meat glue." This enzyme allows scraps of meats to be glued together. This enzyme is usually undetectable by taste but some people can taste this horrible chemical taste. I am one of these tasters, apparently.
This enzyme has not been deemed unsafe, however, the bacteria count in these "put back together cuts of beef and seafood" is extremely higher than real cuts of meat.
I believe that I was given this refund so I would not complain or research further. I know they will sell those cuts of meat to someone else. I have no doubt that they will get the same nutritional value from eating this meat. But, who wants these chemicals and who wants non-choice cuts of beef reattached and sold as prime-choice cuts of beef?
Please avoid eating Direct USA Foods' meat if you would like to avoid eating "meat glue."
