Did not pay for sub contract work done Ripoff

The contracts to us as a drywall contractor do not have the correct board count. EVERY house is short on the contract, we have to bill for the additional, then fight for our money. Now they are questioning the board count, when they ordered the board! (Someone is skimming). They owe approx. $1800.00 for work done, as will not even return phone calls. When we finally did talk to the project Manager, he said he "didn't think" the house took that many boards even tho he ordered them, then accused us of cutting up board. He has accused us of unethical behavior as a business, as well as ripped us off.
I wonder what the home buyer contract says, or the one that goes to the home office??
