Mashed Potatoes Hard Enough for a Fork to Stand Up

I am begging that someone can get in touch with the Cracker Barrel in Chattanooga/Hamilton Place, Tennessee, and please, please tell them how to make mashed potatoes.
They are so hard that my fork can stand up in them without falling over. See picture. Also, they are usually gray, which means they are being cooked and mashed with all the dark spots that are on the potatoes. I have been preparing mashed potatoes for a really long time (I am 69), and I am pretty sure they are making the mashed potatoes with water, no butter and no milk. Just terrible and shameful.
